Grounding Rest begins with rich, dark unpasteurized buckwheat honey and adds deeper botanical notes inspired by hops, lavender, herbs and balsam.
Choose it when you are ready to slow down and transition into quieter moments.
Sunshine offers the brightest HighForest experience. Its local unpasteurized summer wildflower honey is paired with citrus-forward, fresh herbal and conifer-inspired botanical notes.
Choose Sunshine when you want a fresh and uplifting way to begin your day before coffee and breakfast.
Soothing Berry combines unpasteurized wild blueberry blossom honey with a berry-forward profile, soft floral notes and gentle aromatic botanicals.
It is designed for moments when you want to feel calm and centered to ease the stress and anxiety of your day, whether you're working or studying.[






How Much to Use
Begin with one heaping teaspoon.
From there, you can adjust the amount according to your personal preference. The intensity of the honey, flavour and botanical aromas may feel different from one person to another and from one blend to another.
A 130 g jar contains 15 heaping-teaspoon portions.
This is a practical serving guidance rather than a dose. Take time to become familiar with the product and choose the amount and preparation style that work naturally with your routine.


Ways to Enjoy HighForest
Each preparation method creates a slightly different experience. Cold drinks can feel light and refreshing, while warm drinks help release the botanical aromas and are more comforting. Enjoying the honey directly by the spoon provides a fuller flavour and the most concentrated aroma.
None of these methods is universally better than the others — hot or cold drinks are simply the easiest way to experience a blend's full aroma and flavour from the first sip.
Stir one heaping teaspoon of HighForest honey into room-temperature or cold water for a delicious and refreshing drink — similar to a lightly sweetened iced tea or lemonade.
Honey may take a little longer to dissolve in cooler water. Continue stirring until it is dissolved, or begin with a small amount of room-temperature or warm water before adding colder water or ice.
HighForest can also be enjoyed directly from the jar.
Find the amount that feels enjoyable to you, whether that's a quarter teaspoon or a heaping teaspoon, and take a moment to experience the honey's flavour and botanical aromas. Without dilution, the aromatic character will generally feel more concentrated than it does in water, tea or food.

Preparing a Hot Infusion
A warm HighForest infusion is easy to prepare:
Fill approximately half your mug with cold or room-temperature water.
Add boiling water to fill the remaining half.
Stir in one heaping teaspoon of HighForest honey after the two waters have been combined. Adjust to taste and add more if necessary.
Ideal temperature: approximately 40–50°C / 104–120°F.
This creates a comfortably warm drink while helping preserve the honey's aroma and heat-sensitive characteristics. The temperature is a practical preparation target, not a strict threshold at which the product suddenly becomes unsafe or unusable.
Excessive heat can degrade the honey's natural enzymes and other heat-sensitive compounds, and can distort aromatic terpene compounds. Adding the honey after combining the cold or room-temperature water with boiling water helps prevent unnecessary overheating.








Storage and Crystallization
Storing Your Jar
Keep your jar of honey in a pantry-type environment — a cool, dry place at room temperature. Do not refrigerate the jar itself.
A prepared drink (honey stirred into water) can be refrigerated or chilled with ice, since this only applies to the diluted drink, not the honey in its jar.
Keep the lid tightly closed between uses.
Why Honey Crystallizes
Crystallization is a completely natural process, and a sign of minimal processing rather than a flaw. Unpasteurized honey retains more of its natural composition — including the balance of glucose, fructose, water and natural particles — which influences how and when it crystallizes. A crystallized jar has not spoiled.
How to Decrystallize Your Honey
Place your closed jar in a pot of warm water and let it sit for 15–30 minutes, stirring occasionally, until the crystals dissolve and the honey returns to its smooth, liquid state. Aim for a water temperature around 40°C / 104°F, and do not exceed 50°C / 120°F. Never microwave your honey or use boiling water — excessive heat can degrade the honey's natural enzymes and other heat-sensitive compounds.
Best-Before Information
The best-before date on HighForest labels is 3 years from production. This reflects standard food-labelling practice rather than an expiration point — unpasteurized honey's low moisture content and natural acidity give it an exceptionally long shelf a, and properly stored honey rarely spoils. Crystallization or gradual darkening after the best-before date is a normal change in appearance, not a sign that the honey has gone bad.
